Ingredients (makes 1 serving)

  • 4-5 oz mocktail base (see batch instructions below)
  • 2-3 oz plain seltzer water
  • Ice
  • 1 thin slice fresh ginger
  • 1-2 fresh mint leaves, torn
  • 1-2 rose petals, for garnish

Mocktail Base (makes 6 servings)

  • 2 cups strongly brewed Serenity Tea or plain chamomile tea (loose leaf: 2 tablespoons)
  • 2 tbsp dried rose petals (or 1/4 cup fresh), steeped with the tea
  • 3 oz fresh lemon juice
  • 3 oz Horizon Verjus
  • 6 oz honey syrup (3 oz honey mixed with 3 oz warm water)
  • 1 fresh mint leaf, torn
  • 1 slice of fresh ginger
  • 1-2 fresh rose petals, optional.

To prepare:

  1. Steep tea and rose petals together for 10-20 minutes. Strain, add to a pitcher, and chill.
  2. Stir in lemon juice, verjus, and honey syrup. Store in the fridge until ready to serve.

To serve (per glass):

  1. Rim a cocktail glass with your favorite cocktail rimming sugar.
  2. Fill a glass with ice.
  3. In a cocktail shaker, add 4-5 oz of chilled mocktail base, fresh ginger, mint leaves, and rose petals. Shake to chill and mix well.
  4. Pour into your prepared glass through a strainer. Top with 2-3 oz plain seltzer and gently stir.
  5. Add a thin slice of fresh ginger and a few torn mint leaves, rose petals, and a lemon twist or wheel to garnish.

Notes:

  • You can omit ginger or mint if you prefer a more floral experience.
  • If you don't have Verjus, increase the lemon juice.
