Ingredients:
- 1 white or red onion, thinly sliced
- 1 cup apple cider vinegar
- 1 cup water
- 1 tbsp dried hibiscus petals
- 1 tbsp honey or sugar
- 1/2 tsp salt
Preparation:
- In a saucepan, combine vinegar, water, hibiscus, honey, and salt. Bring to a boil.
- Place sliced onions in a heat-safe jar.
- Pour the hot pickling liquid over the onions and let sit uncovered until cool.
- Cover and refrigerate overnight. Keeps up to 2 weeks refrigerated.
