Hibiscus Pickled Onions

Bright, tangy, and deeply pink with a hint of floral tartness. 

Ingredients: 

  • 1 white or red onion, thinly sliced
  • 1 cup apple cider vinegar
  • 1 cup water
  • 1 tbsp dried hibiscus petals
  • 1 tbsp honey or sugar
  • 1/2 tsp salt

Preparation: 

  1. In a saucepan, combine vinegar, water, hibiscus, honey, and salt. Bring to a boil. 
  2. Place sliced onions in a heat-safe jar. 
  3. Pour the hot pickling liquid over the onions and let sit uncovered until cool.
  4. Cover and refrigerate overnight. Keeps up to 2 weeks refrigerated.
