Nasturtium Vinaigrette
Recipe for a vibrant nasturtium vinaigrette that you can use to add a peppery, floral twist to any salad. Try this vinaigrette drizzled over roasted vegetables or even use as a marinade!
Ingredients
· ½ cup fresh nasturtium leaves and flowers (roughly chopped)
· ½ cup white wine vinegar or apple cider vinegar
· 1 tsp Dijon mustard
· 1 garlic clove (minced)
· 1 tbsp honey or maple syrup
· ½ cup olive oil
· Salt & pepper to taste
Preparation
1. In a blender or food processor, combine the nasturtium leaves and flowers, vinegar, Dijon mustard, garlic, and honey (or maple syrup).
2. Blend until the nasturtiums are finely chopped and mixture is smooth.
3. With the blender running, slowly drizzle in the olive oil until the vinaigrette emulsifies.
4. Taste, then season with salt and pepper as needed.
5. Serve immediately or refrigerate in a sealed container for up to one week.
