Rose-Scented Granola

Rose-Scented Granola

A crunchy floral granola that’s lightly sweet and perfect over yogurt or on its own.

Ingredients:

  • 2 cups gluten-free rolled oats
  •  1 cup chopped raw nuts (like pistachios or almonds)
  • ½ cup unsalted sunflower seeds (optional)
  • ½ cup unsweetened shredded coconut
  • ¼ cup dried goji berries
  •  ¼ cup dried figs, chopped
  • ¼ cup maple syrup or honey
  •  1 tbsp rose water
  • 1 tsp vanilla extract
  • 2 tbsp coconut oil 
  • ¼ tsp salt
  • 1–2 tbsp dried edible rose petals

Preparation:

  1. Preheat oven to 325°F. Line a baking sheet with parchment.
  2. In a large bowl, mix oats, nuts, seeds, and coconut.
  3. In a saucepan, warm maple syrup, rose water, vanilla, coconut oil, and salt until just melted. Pour over oat mixture and stir well.
  4. Spread on baking sheet and bake for 20–25 minutes, stirring halfway.
  5. Once cooled, stir in goji berries, figs, and dried rose petals.
