A crunchy floral granola that’s lightly sweet and perfect over yogurt or on its own.
Ingredients:
- 2 cups gluten-free rolled oats
- 1 cup chopped raw nuts (like pistachios or almonds)
- ½ cup unsalted sunflower seeds (optional)
- ½ cup unsweetened shredded coconut
- ¼ cup dried goji berries
- ¼ cup dried figs, chopped
- ¼ cup maple syrup or honey
- 1 tbsp rose water
- 1 tsp vanilla extract
- 2 tbsp coconut oil
- ¼ tsp salt
- 1–2 tbsp dried edible rose petals
Preparation:
- Preheat oven to 325°F. Line a baking sheet with parchment.
- In a large bowl, mix oats, nuts, seeds, and coconut.
- In a saucepan, warm maple syrup, rose water, vanilla, coconut oil, and salt until just melted. Pour over oat mixture and stir well.
- Spread on baking sheet and bake for 20–25 minutes, stirring halfway.
- Once cooled, stir in goji berries, figs, and dried rose petals.
